Beth began as the sports dietitian for the University of Utah Athletic Department in 2007. She works with each team to improve performance and overall health through food. Beth is a Registered Dietitian with her Masters of Science degree in nutrition from the University of Utah and her Bachelors of Science degree in exercise science from Northeastern University in Boston. She has worked in the health and wellness field for over 20 years in facilities around the United States, as well as, England and Australia.
Beth is also an adjunct faculty member in the Division of Nutrition and the preceptor for the graduate students specializing in sports dietetics. Beth is a Certified Strength and Conditioning Specialist, as well as, Board Certified Specialist in Sports Dietetics.
A native of Maine, Beth loves spending time with her son Zachary and being outside - running, hiking, skiing and mountain biking. She regularly completes in triathlons, has completed 13 marathons and climbed Mt. Kilimanjaro in Africa.
